Alas, summer is coming to end, but we still have some hot days ahead. Mojitos are one of my favorite adult beverages, transporting me back to summer and making me feel like I’m having a Havana night. Unfortunately, they are full of sugar and terrible for your waistline, but the sugar is what makes them delicious. Not only does it add sweetness, but the texture of sugar allows it to pull flavors from the mint and lime when all muddled together. I’ve created a healthier version without all the calories so you can indulge in more than one of these delicious libations and have all the flavor as the original. Enjoy!
- 1/2 of a fresh lime cut into wedges (Tip: Put the whole lime in the microwave for 15 seconds before cutting it. It’ll juice easier.)
- 7 fresh mint leaves
- 1 Tbsp of Erythritol sugar substitute (you should be able to find this at a health food store or order it online). If you are really hard pressed, you can use something like Splenda, but I don’t recommend doing this all the time. Most sugar substitutes are really bad for you.
- 1.5 oz of white rum (40% alcohol of course)
- 1 can of soda water
- Slice a few lime rounds and keep a mint stalk for garnish
In a tall glass, add the lime, mint and sugar substitute. Using the handle end of a wooden spoon (or if you have a muddler) smash-up the ingredients in the bottom of the glass very well. If you think you’ve muddled enough, give it a go again for another minute.
Fill the glass up 3/4 with ice and add the rum and fill to the top with club soda. Add the sliced lime rounds and mint leaf stalk to make it pretty. Serve with a straw.
(Tip: If you want to get fancy, add some berries or watermelon to the mixture and muddle together with the other ingredients. It’ll add a few calories and some natural sugar, but that’s OK, it’ll taste delicious. :))
