Here’s to starting New Year’s resolutions right. You can make this simple cocktail as your go-to for the evening. It’s low in calories, full of anti-oxidants and looks, feels and tastes very festive. Have more than one, it’s New Year’s Eve! It reminiscent of the spiked high school punch bowl at prom, but a tad more sophisticated.
Ingredient List (makes 6)
- 1 bottle dry sparkling white wine (Cava or Prosecco will do nicely)
- 350ml pure pomegranate juice (store-bought is fine, go for no added sugar)
- 4 fresh oranges (sweet ones)
- 1/2 cup fresh pomegranate seeds
- 2 fresh lemons
Peel your lemons so the rinds form a long, thin and curly strip. Peel the pomegranate, remove the seeds and set aside for garnish.
Juice the oranges by hand and strain the pulp and seeds.
In a champagne flute add a few pomegranate seeds. Then fill 1/4 of the glass with the pomegranate juice, the next 1/4 with orange juice and the remainder with the sparkling wine. Garnish with a curly lemon rind on the rim of the glass. Serve chilled.
